Ingredients

  • 4 eggs
  • 1 onion
  • 1 cm ginger
  • 1 green chilli
  • 1 tomato
  • 1/2 tsp ground cumin
  • 1/4 tsp turmeric
  • coriander leaves

Instructions

  1. Finely chop the onion and fry on a low heat until soft.

  2. Add the grated ginger, chilli, turmeric, cumin and chopped tomato.

  3. Stir and cook until the tomatoes are soft.

  4. Beat the eggs and add to the pan with the chopped coriander.

  5. Salt and pepper lightly, and stir the eggs continuously until cooked.
