  • 1 aubergine
  • 1 onion
  • 1 tomato
  • 1/2 tsp turmeric
  • 1 fresh green chilli
  • coriander leaves


  1. First prepare the aubergine. Simply pop it in the microwave for a couple of minutes until the flesh is soft and can be pulped.

  2. Next, finely chop the onion, tomato and green chilli, and fry gently in a pan with the turmeric.

  3. Chop the softened aubergine into bite size pieces and add to the pan. Salt to taste.

  4. Cook gently with a little water and add lots of chopped fresh coriander just before serving.
